Aubergines

Sow in April under
glass. As soon as the second leaf unfurls they can be hardened
off outdoors in late May. They can be grown in peat filled
polythene bags or as a pot plant. When about 8" high pinch out
the top. Tap plants daily and syringe over to help pollination.
Liquid feed once a week when fruit is formed. Prone to red
spider mite, syringe with water in dry weather.

Kitchen Tips:
Peel
fruit and cut into inch thick slices. Blanch for 4 minutes,
chill and dry. Pack in layers of 4 to 5 slices, separating each
slice with polythene to prevent sticking.
